Recipe: Salmon Poke Bowl

This is one of my favorite and fastest meals for a balanced and delicious intake of omegas + fats, complex carbs and protein all at the same time. It's targeting brain health, heart health, fueling the body and satisfying my hearty meal cravings simultaneously. It feels like I'm eating homemade sushi or a poke bowl just the way I'd want a restaurant menu to offer it! **Soy sauce is very high in sodium so I recommend leaving it out of the meal.

Salmon Poke

Ingredients:

Part of why I love this recipe is because you can just throw everything in a bowl based on preference and personal portion size so I have not included measurements. This is a great recipe to practice intuitive eating.

  • Salmon (preferably not farm raised, I usually cook a 6oz for myself)

  • White or brown rice (can buy steam bag just make sure there’s no added ingredients)

  • Avocado sliced up

  • Cucumber chopped

  • Seaweed wraps

  • Sriracha Mayo (or take chipotle hot sauce and mix it with olive oil mayo)

  • Everything bagel seasoning lightly on top

Directions:

  1. Cook salmon at 425 degrees for 20-25 mins.

  2. Season lightly with “everything bagel seasoning.”

  3. Mix all other ingredients (rice, cucumber, avocado) in a bowl together and drizzle sriracha mayo lightly on top & add a little more seasoning if you want.

  4. You can take a spoon and put some of the bowl in the seaweed wraps and it tastes like a sushi wrap.
